OUR STORY
Our baker's journey started when he was just 13 years old working after school in a traditional Sardinian bakery making Pane Pergamena a thin crispy rectangular sheet of bread, back in his hometown in Alghero Italy,
he then decided to train as a professional chef and later move to Aberdeen with his wife Alex , he worked his way up to Head Chef working around Aberdeen's most renowned restaurants.
In 2016 he started experimenting with Sourdough Levain and he became passionate to create the very best authentic artisan breads and bakes.
In March 2020 he decided to start his own MicroBakery, a place where he could work and still grow from home.
Our sourdoughs are made from our own fermented "starter" fermented flour and water mixture that contains wild yeast and good bacteria using only natural, local (if not local Scottish if possible) flour and a pinch of salt , as it doesn't contain any additives, we recommend to store it in an airtight container to keep it fresh for longer, it also freezes really well, so if you know you won’t eat the whole loaf, freeze half for another day. Defrost on a wire rack, covered with a tea towel, so the bread doesn’t dry out or develop a soggy bottom.
WHY SOURDOUGH?
More of us have been eating mass produced loaves, which can leave a legacy of bloating and lethargy, although wheat has been part of our diet for thousands of years, the digestive problems associated with bread have increased rapidly, with over 80% of "breads" in the shops today produced with the CBP method.
CBP uses a new strain of wheat, high speed mixing, flour improving additives and enzymes to cut production time. The end result is bread without a crust, but with lots of volume, lightness and a soft squishy texture that can last for several weeks before the chemical preservatives can no longer hold back the growth of mould.
Sourdough is a healthier alternative to regular white or whole wheat bread. Although it has comparable nutrients, the lower phytate levels mean it is more digestible and nutritious. The prebiotics also help to keep your gut bacteria happy, and it may be less likely to spike blood sugar levels, some store-bought sourdough breads are not made using the traditional sourdough method, thereby reducing their health benefits.
